Super simple souped-up spaghetti

Okay, so this recipe is almost like cheating.  If you only have 15 minutes to make a yummy meal, this is the one for you.

What you need:
1/2 cup fresh basil
1 teaspoon minced garlic
1/2 box (6.6oz) whole wheat spaghetti (or linguini, angel hair, penne-whatever you prefer)
2 freshly diced Roma tomatoes (cherry tomatoes are good too if that is all you have)
1 cup asparagus in 1″ bite size pieces
4 white button mushrooms thinly sliced

What to do:
Cook pasta of choice al dente as directed.  While the pasta is cooking, in separate frying pan bring 1/2 cup water, 1/4 cup canola oil, and garlic to boil.  Add asparagus and boil for 2 minutes.  Reduce heat to simmer.  Add Roma tomatoes and mushrooms to asparagus and garlic, continue to simmer for 5 minutes.  Add salt and pepper to taste.  When pasta is al dente, remove from boiling water with tongs and place immediately into vegetable frying pan mixture.  Add basil and stir for about one minute.  Optional to add a small amount of fresh grated parmesan to top it off.

Waahhhlaaa!!!  The easiest yet yummiest meal to prepare- EVER.  Enjoy with a glass (or two) or your favorite red wine.  We have found Bota Box to be our favorite “go-to” cheap boxed wine…try it!
